My whole life I ate whatever I pleased, until my food sensitivities developed halfway through high school. This guided me to food journaling where I discovered what kinds of foods I could tolerate without the bloating and discomfort. I became hyper conscious of what I could make to snack on and that inspired me to meal prep. On my journey I created this delightful bite and now I get to share this mindfully sourced homemade recipe with you!
So what are they?
This keto-friendly snack is a combination of nuts, coconut, and dates and provides a quick bite high in protein, healthy fats, and low carbs keeping you full between meals, before and after a workout.
Inspired by The Whole30, I chose this combination of nuts and coconut because they are naturally high in monounsaturated and polyunsaturated fats that can improve blood cholesterol and decrease the risk of heart disease and cardiovascular disease. Almonds, cashews, and walnuts are also high in vitamins B2, B3, E, copper, phosphorus, magnesium, manganese, and zinc. The addition of dates (a naturally occurring sugar for sweetness) helps bind the bite, as does coconut oil which helps increase good cholesterol in this tasty bite!
